Chili…because it’s feeling like fall…most places anyway right? I’m going to just pretend it feels like fall here in South Texas. Because it’s November, and I want to be in sweatpants and chili mode all weekend. Like literally all weekend. Don’t try and get me to get dressed and leave the house or do basically anything else. There’s no reason we can’t make that happen (excuse the 80 degree temps outside).
So, here we go. My chili recipe. You might hear some people condemn putting beans in chili (especially in Texas!), but I am a-ok with beans in mine. I think it adds heartiness and texture and plus beans are GOOD. This is one of those things that you have to make a huge pot of because who makes small batches of chili?! No one. Soyou can either choose to eat it every night and not be the least bit sad about that, or even freeze some so when it’s actually winter and it’s way way way too cold to leave the house (and by cold I mean below 60 degrees) and you have nothing, absolutely nothing to eat in the house and you feel like your stomach might literally explode if you don’t eat soon, you’re all set.
I added lime juice to this chili, which is a little bit unorthodox but I never claimed to be totally normal now did I? I mean, is there anything lime juice can’t fix? Well besides ice cream. And chocolate. And bread. And ok, enough. I take that back. Lime juice makes some things better.
So, grab a spoon and some tortilla chips and get your chili making game on. There’s not a lot of things in this world that are better than a good ole bowl of this stuff. Except maybe ice cream. And chocolate. And bread…ok stop. Chili is better than some things.
