Cranberry, walnut & goat cheese salad – the salad of of all salads.  This is one good salad.  It will make all your salad dreams come true.  Ok, that might be a slight exaggeration, but it is really good.  Would you look at all this yumminess in one little bowl?  cranberry, walnut & goat cheese salad

 

 

This is my go to salad.  It’s been popping up on pretty much every restaurant menu you can find, and there are varying degrees of fanciness to it.  But it’s really simple.  You can dress it up and make it all pretty if you want.  But it doesn’t need much, trust me on that one.

Here are your ingredients.  So simple, right?

Can we talk about Ocean Spray® Craisins® Dried Cranberries for a minute?  I keep this in stock at my house, all the time.  It would be an utter state of emergency if we ran out.  I use them for a lot of different things – so I like to buy them in bulk.  I used to find them at Sam’s Club but unfortunately they no longer carry them at mine.  But then I saw them at HEB the other day and winner winner chicken dinner they’re in value packs now!  So, here’s where I found them.

So, I went ahead and bought two, because I like Craisins® Dried Cranberries, ok?  I’m on the you can never have enough of these babies train.  They add a sweet and tangy zing to so many things.  I use them in granola (which I eat by the handful – is there any other way to eat granola??), mixed with yogurt, in baked goods…the list is endless – and I’m apparently not the only one who thinks so!  Check this out!

Ok, so back to my cranberry, walnut & goat cheese salad.  A salad is a healthy food.  Or at least most start that way 😉  But this one actually is.  I used a mixture of spinach and arugula for my greens, but any kind will work.  I love the peppery bite the arugula adds, and spinach one of the healthiest greens you can get.  Adding the Craisins® Dried Cranberries really brings the salad to another level, taste wise, but also – did you know that 1/4 cup serving is equivalent to a 1/2 cup of fruit?  WINNING.  I get my cake and I get to eat it to….kind of…in salad and fruit form…oh you know what I mean.

So, simpy chop up the leaves and mix your ingredients and voila – healthy, yummy, delicious salad.  This salad is seriously #betterwithcraisins.

Oh and I always use balsamic dressing with this salad.  It’s a perfect match.
