Gnocchi mac n cheese…aka crack n cheese

Gnocchi mac n cheese!!  Or as I lovingly coined it, crack n cheese.  That’s what this is!  SERIOUSLY y’all.  Don’t make it.  Don’t ever make it.  Because you will not be able to stop eating it.  I mean, homemade mac n cheese on it’s own is winning, am I right?  But, for real, who doesn’t love potatoes and especially when they are covered in cheese?!

It’s been two WHOLE weeks since my last post.  I have no excuse.  Actually I do – we had family in town the last two weekends.  We absolutely love when people come to visit (HINT HINT – to my friends that haven’t come in awhile!!), but it doesn’t leave my usual time to meal plan, cook, photograph and edit photos on weekends like I normally do.  That leaves my weeks more hectic, because I don’t typically have a grab and go breakfast ready, plus I’m trying to come up with plans for dinner at the last minute.  Just not good.  Makes me realize just how important meal planning on weekends is!  The other thing is, my sister left.  I have to be honest.  She is hands down the best sister.  You may think yours is awesome, but no, no one has her beat.  This chic drove all the way from New York to Texas to spend the summer watching my sweet (bratty at times) little girl.  All summer, I didn’t have to worry about daycare so that saved me a lot of time.  I could leave 15 minutes later in the morning.  I got home 15 minutes earlier in the evening.  I didn’t have to pack breakfast, lunch and snacks for Layla the night before.  She went to the grocery store, she cleaned, she did laundry, she cooked.  It was like having a live in nanny/housekeeper.  So when she left (booo – why can’t I afford a NYC teacher salary?!), that left me with a lot more to do, and a lot less time.  So, the last two weeks have been spent mainly trying to adjust to doing all that without her help.  Luckily my hubby is super helpful in the mornings.  He gets Layla ready (although I pick out her outfits – duh – too many backwards outfits incidences to date), feeds the dogs, makes the beds and typically cleans up from my hurricane after I leave the house every day.  I’m a lucky gal 🙂 Ever heard the saying it takes a village?  Man, is that true.  I need a village and a half.  gnocchi mac n cheese

So back to the gnocchi mac n cheese.  Here’s where this idea came from.  A few years ago, while visiting my sister in New York, we went to this awesome little tapas place.  She kept telling me that I had to try the bacon popcorn and the crack n cheese.  No twisting my arm there.  So we go in, we decline the menus, because what’s there to look at when they are serving little bites of potatoes drowned in cheese?  They bring the bacon popcorn out and I’m not appalled…you can taste the bacon for sure.  But it definitely wasn’t bad.  It tasted exactly as it sounded.  Popcorn with a little bit of bacon flavor.  Then we order our gnocchi mac n cheese…aka crack n cheese and {insert gasp face} they took it off the menu.  Oh no you didn’t!  But yes, yes they did.  I was ready to walk about, but we begrudgingly decided to try some other things on the menu instead.  I’ve been dreaming of gnocchi covered in cheese sauce ever since that day.

So, one day we made some homemade gnocchi.  There was tons left, and we decided to try it out, once and for all.  You start with a bechemal sauce, obviously.  Then you add a bunch of shredded cheese.  That’s your cheese sauce.  In the meantime, fry up the bacon and lightly pan fry the gnocchi.  It takes the gnocchi to another level.  Trust me on that one.  Whatever gnocchi is left after you sample (I wouldn’t even judge you if there was none left, because pan fried gnocchi is that good), mix with the cheese sauce.  Top with more shredded cheese, crumbled bacon and bake.

When it’s ready, you have this dreamy concoction and you’ll be all like Kraft mac n cheese what?  I mean seriously, why didn’t I question powdered cheese as a kid?!  Real cheese is the way to go y’all.  End rant.

Just try and look at this gnocchi mac n cheese without drooling.  Bet you can’t.

Instructions
  1. Cook gnocchi according to package instructions. Then lightly pan fry in butter until golden brown and crispy.
  2. Melt remaining butter over medium heat. Add flour and stir constantly. Add milk and when combined, add 2.5 cups of shredded cheese. Season with salt and pepper.
  3. Mix cheese sauce with gnocchi and put it into a baking dish. Top with crumbled bacon and the remaining shredded cheese. Bake until cheese is melted.
