Goat cheese quiche – could there be a better idea than that in the history of quiche making? I don’t think so. Quiche sometimes seems old fashioned to me but sometimes seems like a totally delicious can’t have a brunch without it type of meal. When quiche became popular in the 80’s, it was pretty basic. Now, thanks to the internet and so many creative bloggers out there, there are SO MANY yummy varieties. So, skip the cheddar cheese and bacon and get creative. Make some goat cheese quiche asap.
I used goat cheese, spinach, mushrooms and breakfast sausage in this yummy dish. Goat cheese makes it wonderfully creamy and gives it just a little bit of tang. And sausage is my jimmy jam. Seriously. In any way shape or form, pretty much, I like it. So go on and add some sausage to your quiche next time.
I also discovered that quiche makes the easiest make ahead breakfast. Like, seriously. Make it on the weekend and impress people with your lovely brunch. Then cut it into slices and have it ready to go in microwave safe containers. It tastes just as good in the microwave! I ate it all week for breakfast. Then I ran out and I was back to the daily morning struggle of grabbing something quickly on my way out. It doesn’t usually end well. It’s usually something not as healthy, not as satisfying and not as filling. So I end up sitting at my desk around 11:00 am, with my stomach growling. So, lesson learned. Quiche is now going to become a regular part of my weekend rotations, because LEFTOVERS that’s why! Oh and let’s not forget the protein and all the goodness from the spinach. Totally winning breakfast combo, in my opinion.
The possibilities with quiche are endless, so if there’s any ingredients you don’t like, just substitute with something you do like. But, really, who doesn’t think goat cheese quiche sounds good?
