Pan Roasted Chicken Thighs with Potatoes and Carrots

One pan y’all.  I promise.  That’s all you need.  I didn’t know if I could do it, but I did.  I’ve been making this really good, ok maybe even great bone in chicken thigh dish for years and I wanted to transform it into a one pan dinner.  So I did.  What is it about crispy golden chicken skin?  So. Darn. Good.  I never claimed to be a health nut, did I?  And I mean come on, it’s not like it’s loaded with MSG and thrown in a deep fryer.  So I render this a healthy meal.  You can interpret healthy however you want 😉

Also, this only has FIVE ingredients.  Plus salt and pepper but those are freebies since every household in America stocks them…right?  Five ingredients, one pan and dinner is served.  Fresh bread and butter make everything, so you know, you could add that too.

Instructions
  1. Preheat oven to 450 degrees.
  2. Wash, peel and quarter potatoes (think bit sized pieces). Peel and cut carrots.
  3. Season chicken with salt and pepper on both sides.
  4. Heat oil in cast iron skillet over medium-high heat until hot but not smoking. Sprinkle a generous layer of salt into the oil. Put chicken in skillet, skin side down and cook for 2 minutes.
  5. Reduce heat to medium. Add potatoes. Fry for 10 minutes (check potatoes - once they are nicely browned they are done). Flip potatoes.
  6. Add carrots. Sprinkle with half of the fresh oregano. Put the whole pan in the oven and cook for 15 minutes. Flip chicken halfway through. Flip carrots and potatoes so everything cooks evenly.
  7. Remove from heat and sprinkle with fresh oregano.
