Proscuitto wrapped Swordfish

This dish is every bit as decadent as it sounds.  It’s definitely something you make as a treat, although it’s not so time consuming that you can’t make it on a weeknight!

You can wrap the swordfish in any kind of cured meat and get the same result.  A really moist, flavorful piece of fish!

Instructions
  1. Season swordfish with salt and pepper. Wrap in proscuitto.
  2. Combine panko breadcrumbs with parmesan cheese. Dip wrapped swordfish in beaten egg , then in panko breadcrumb mixture. Lightly press the swordfish into the mixture, making sure it's well coated.
  3. Heat the olive oil on medium/high heat until lightly browned (about 3 minutes). Flip swordfish over and transfer skillet to preheated oven - cook for about 5 more minutes.
  4. While the swordfish is roasting in the oven, melt the butter over medium heat. Add the sliced almonds, and cook for a few mintues until lightly toasted. Remove the pan from heat, add the lemon juice, capers and parsley. Spoon on top of swordfish to serve.
